We are looking for a skilled, multi-species Butcher with experience ranging from whole carcass breakdown all the way to retail cuts.
The facility will primarily process beef, however other species will likely be added eventually.
This opportunity is ideal for a seasoned butcher who is interested in growing and honing their skills in an environment that encourages our leaders to take ownership in the direction they help lead the company in.
We are looking for a hardworking individual who, beyond obtaining the tangible ability to butcher, is willing and able to wear many hats, create and enforce structure and guide and train new team members.
Note that we are not open yet! Our facility is under construction.
We plan to open sometime during the winter of 2023-2024.
If we find the right candidate, we are willing to hire before we are operational in order to have our leadership in place and ready to go.
Major Duties &
Responsibilities:
Hands on participation in and management of all fabrication activities, including but not limited to:
Carcass storage, processing and packaging Organization of finished product Ingredient, packaging and replacement equipment ordering Train and support new developments and team members Create, implement and hold team members accountable to systems set in place to ensure traceability, quality control and customer satisfaction Manage product flow in an organized fashion to successfully fill all company orders Present new ideas and/or implement existing SOPs and other processes to further improve company practices Verify HACCP, SSP and all other relevant production records, including the preparation of samples for outside lab testing and the associated record keeping Develop and enact equipment maintenance schedules Willingness to jump in and support slaughter team, when needed Work hand-in-hand with Slaughter Manager to maintain an organized carcass cooler Maintain a professional working relationship with USDA inspectors and comply with enforced regulations Qualifications 2
years of industry experience, including:
Excellent knife skills Ability to break down carcasses into primals, subprimals and individual cuts with precision, care and respect, with complete knowledge of nose-to-tail carcass utilization Power equipment usage and knowledge of cleaning and maintenance standards (e.
g.
bandsaw, grinder, tenderizers, etc.
) Strong communication skills Excellent organizational, time management and problem solving skills Ability to train and teach others, as well as nurture growth in team members Ability to be a forward thinking and collaborative team player Ability to work in cool/cold environments, stand for prolonged periods of time and lift 75+lbs regularly Adhere to safety and sanitation procedures and food safety compliance regulations HACCP certified is a plus Compensation & Benefits $50,000-75,000, DOE with room to grow Health benefits Paid time off Financial assistance for relocation or housing may be available, case by case basis Job Type:
